Weekend Morning Biscuits

This biscuit recipe is worth getting up a little early for on a weekend morning. It takes a bit of work and a lot of technique but this recipe is well worth it.

You’ll want to read this recipe in its entirety before you start making the biscuits. The name of the game here is to keep the butter cold, so you’ll want to move quickly on the steps where the butter (or the dough with the butter in it) isn’t in the fridge or the oven.

Ingredients

  1. 460g Self Rising Flour

  2. 195g Cold Butter

  3. 250g Buttermilk

  4. 1/4 tsp baking soda

  5. 5/2 tsp baking powder

  6. 3/2 tsp salt

Recipes

  1. Start by placing the butter in the freezer for 5-10min and clear out enough space in the fridge to place the baking sheet in there temporarily. Get the baking sheet ready by lining it with parchment paper.

  2. Sift the flour into a bowl and whisk in the rest of the dry ingredients into the flour.

  3. Take the butter out of the freezer and use a box grater to get pea-sized pieces of butter into the dry ingredients. Drop the stick of butter into the dry ingredients before grating to help keep it cold. Once the butter is grated into the dry ingredients make sure it is evenly distributed by whisking it for a minute.

  4. Start adding the buttermilk to the dry ingredients until it starts to come together into a shaggy dough. It’s important to form the dough quickly and knead as little as possible.

  5. Get the dough out of the bowl and roll it out into a flat sheet that is about 1”-1.5” thick, cut into 4 quarters and stack these quarters on one another, and then roll this stack into a sheet of dough, like before. Repeat this lamination process about six times, and if the dough starts to get too warm or you find it’s being difficult to roll out place it on the baking sheet and place it to rest in the fridge for 10min.

  6. After finishing the laminating steps cut the biscuits out of a flattened sheet, either squares or rounds, and place them on the baking sheet to chill in the fridge. Preheat the oven to 425F.

  7. As the oven preheats you can optionally prepare an egg wash by beating an egg white with a tablespoon of water. Once the oven is preheated, get the biscuits from the fridge and brush on the egg wash, and put the biscuits in the oven. Once the biscuits are in the oven turn the temperature down to 400F and bake for 20-25min.
